It has been fun looking for vegetarian meals that not only look good, but taste good. This is a meal that I have made for quite a while now and it is one of my favorites. It is really good with sourdough or french bread & a nice glass of vino if you are so inclined!
Linguine with Fresh Tomato and Basil
8 oz. linguine, uncooked
3 medium tomatoes, chopped
1/3 cup thinly sliced fresh basil
1 Tbsp. olive oil
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
3/4 cup shredded parmesan cheese
Cook linguine as directed on package. Meanwhile, mix tomatoes, basil, oil, garlic, salt, and pepper in a large bowl. Add drained linguine and cheese; toss lightly. Serve immediately. Makes 4 servings.
