Score one for me! I found another vegetarian recipe that I’ve never made before. I came across this deliciousness in a free recipe book that I received from Parents Magazine when I started a subscription with them. This was sometime after I became a Mommy.
So basically, I’ve had this recipe for almost 2 years and didn’t know it. (Can you tell I’m a mom? Sigh…)
Anyways, the recipe looks simple enough to make and it’s vegetarian. I’m all over this one!
Cheesy Vegetable Quesadilla
1 can (15 ounces) black beans, rinsed and drained
1/2 cup mild salsa, plus extra for serving
8 small whole-wheat tortillas
1/2 cup chopped roasted red pepper
1 ripe avocado, chopped
1/3 cup crumbled feta cheese
Heat oven to 400 degrees F. In a medium bowl, mash together black beans and salsa. Divide among 4 tortillas. Top with red pepper, avocado, and feta. Place remaining tortillas on top and sandwich together.
Place quesadillas on a large greased baking pan. Spray quesadillas with vegetable cooking spray. Bake 10 minutes. Cut into quarters and serve with extra salsa, if desired.
