I am more and more on a mission to limit the amount of meat that my family and I consume. I have noticed that I tend to feel very sluggish after eating a meal that has meat, so I am continuing to find some really great recipes out there.
I love a good burger and this recipe is a great compromise! Veggie and no meat? Count me in!
2 TBSP finely chopped carrot
2 TBSP finely chopped red pepper
2 TBSP frozen whole-kernel corn
1 cup cooked beans and rice
1 egg yolk
1 TBSP dry bread crumbs
1 TBSP olive oil
6 small whole grain buns
6 small lettuce leaves
6 tomato slices
1/4 cup plain yogurt
2 tsp honey mustard
(*) Place carrot, red pepper, and corn in a microwave safe bowl and add 1 TBSP water. Cover with wax paper and microwave on High for 2 minutes or until tender. Drain and set aside.
(*) Place rice and beans in a bowl and mash with a fork. Stir in cooked veggies and egg yolk. With wet hands, shape the mixture into 6 well-rounded balls, then roll in bread crumbs to coat. Flatten into patties.
(*) Heat oil in a skillet on medium. Cook patties for 2 to 3 minutes per side. Serve on buns with lettuce, tomato, and a dip made of the yogurt and honey mustard. Serves 6.
